Protein Pancakes with Greek Yogurt & Berries

Fluffy protein pancakes topped with creamy Greek yogurt, fresh strawberries and blueberries, and a drizzle of something sweet. With around 40 grams of protein, they’re an easy way to turn a classic pancake breakfast into a filling, protein-packed meal.

1 serving

  • ½ cup rolled oats or oat flour

  • 1 scoop vanilla protein powder

  • 1 large egg

  • ¼ cup Greek yogurt

  • ¼ cup milk of choice

  • ½ tsp baking powder

  • ½ tsp vanilla extract

  • Pinch of cinnamon

  • ¼ cup blueberries

  • ½ cup sliced strawberries

  • ¼ cup Greek yogurt, for topping

  • 1 tbsp maple syrup or honey


Blend the oats, protein powder, egg, Greek yogurt, milk, baking powder, vanilla and cinnamon until smooth. Cook pancakes in a lightly greased skillet over medium heat for about 2–3 minutes per side. Top with Greek yogurt, fresh berries and a drizzle of maple syrup or honey.
