Loaded Baked Potato Taco

Turn a classic loaded baked potato into a taco-inspired meal! These Loaded Baked Potato Tacos combine fluffy baked potatoes with seasoned ground beef, melted cheese, salsa, guacamole, and fresh toppings. They’re hearty, easy to customize, and perfect for a quick dinner or game-day meal.

Ingredients
4 large russet potatoes
1 lb ground beef
1 packet taco seasoning
1 cup shredded Mexican-style cheese
½ cup salsa
½ cup guacamole
¼ cup chopped green onions
¼ cup chopped fresh cilantro
Salt and pepper, to taste
Directions
Bake the potatoes. Preheat oven to 425°F. Wash and dry the potatoes, pierce several times with a fork, and bake for 45–60 minutes, or until tender.
Cook the beef. While the potatoes bake, brown the ground beef in a skillet over medium heat. Drain excess grease, then add taco seasoning and prepare according to package directions.
Open the potatoes. Slice each baked potato down the center and gently fluff the inside with a fork. Season with salt and pepper.
Load them up. Top each potato with seasoned ground beef and shredded cheese.
Add the toppings. Finish with salsa, guacamole, green onions, and fresh cilantro.
Serve warm and add any of your other favorite taco toppings!
