Garlic Shrimp & Scallop Pasta

An easy seafood pasta with tender shrimp and scallops, fresh vegetables and angel hair tossed in a light garlic butter sauce. It feels like a restaurant dinner but comes together in about 30 minutes for an easy weeknight meal or date night at home.

1 serving

  • 2 oz dry angel hair or spaghetti

  • 4 large shrimp, peeled and deveined

  • 2–3 sea scallops

  • 1 cup fresh spinach

  • ½ cup mushrooms, sliced

  • ½ cup cherry tomatoes, halved

  • 2 cloves garlic, minced

  • 1 tsp olive oil

  • 1 tbsp butter

  • ¼ cup chicken or seafood broth

  • 1 tbsp grated Parmesan

  • Fresh parsley or Italian seasoning

  • Red pepper flakes

  • Salt & pepper

  • Fresh lemon juice


Cook the pasta according to package directions. Season the shrimp and scallops and sear until cooked through, then set aside. Sauté the garlic, mushrooms, tomatoes and spinach in olive oil and butter. Add broth, Parmesan and a splash of pasta water to create a light sauce. Toss with the pasta and seafood and finish with lemon, herbs and red pepper flakes.
