The perfect balanced summer dinner: a homemade cheeseburger paired with pesto pasta salad, charred corn and a refreshing watermelon cucumber salad. It's fresh, colorful and proof that eating well doesn't mean your plate has to look like "diet food."

Cheeseburger

  • 4 oz 90–93% lean ground beef

  • 1 hamburger bun

  • 1 slice cheese

  • Lettuce

  • Tomato

  • Salt & pepper

Pesto Pasta Salad

  • ½ cup cooked rotini

  • 1 tbsp pesto

  • Cherry tomatoes

  • Chopped spinach

  • Optional Parmesan

Grilled Corn

  • ½–¾ cup corn

  • Salt & pepper

  • Cooking spray or a small amount of olive oil

Watermelon Cucumber Salad

  • 1 cup cubed watermelon

  • ½ cup chopped cucumber

  • Lime juice

  • Pinch of salt

  • Optional fresh mint


Cook the burger in a hot skillet or on the grill and top with cheese. Toss the cooked pasta with pesto, tomatoes and spinach. Char the corn in a skillet or on the grill. Combine the watermelon and cucumber with fresh lime juice and a pinch of salt.
